'Nduja Avocado Toast

It feels like we're falling right into the Millennial playbook but avocado toast is just too tasty to pass up and sometimes you just have to embrace it. The addition of 'Nduja turns this pretty good breakfast or snack into a spicy, salty, savory flavor bomb. Feel free to play with the toppings making any substitutions. This variation is just one of the many we tried and one of our favorites.

For the Avocado Toast

  • 2 thick cut slices Sourdough bread loaf
  • 1 Avocado
  • 50g 'Nduja
  • 2 Radishes
  • Handful Mizuna
  • 2 tsp Olive oil
  • 50g Aged cheddar cheese
  • 50g Chili paste

  1. Slice and toast the bread slices until the desired doneness has been achieved
  2. Spread the 'Nduja on the toast
  3. Peel, core and mash the Avocado. Spread the avocado over the 'Nduja. The avocado will act as a glue holding the top and bottom toppings together
  4. Sprinkle the cheese over the avocado
  5. Drizzle with olive oil over the avocado and add the remaining toppings: radishes, mizuna, and chili paste.
