Pork Tenderloin Sandwiches

I've been making fresh bread at home lately and one of the problems is always, "What should we do with all of this bread?" Sandwiches are always great with fresh bread and this pork tenderloin sandwich ticks all of the boxes. Juicy pork tenderloin, fresh veggies and great condiments make for an excellent all-around sandwich.

For the Pork Tenderloin

  • 1 Lbs. Pork Tenderloin
  • To taste Chile powder
  • To taste Salt
  • To taste Garlic powder
  • To taste Coriander
  • To taste Cumin
  • To taste Cayenne
  • To taste Onion powder
  • To taste Dried parsley

For the Sandwiches

  • 8 slices Fresh bread
  • To taste Arugula
  • 4 Tbsp Whole-grain mustard
  • 4 Tbsp Mayo
  • To taste Pepper jack cheese
  • 4 Tbsp Caramelized onions


  1. Preheat the oven to 475° Fahrenheit with a castiron skillet inside
  2. Mix together the spice mixtures. For example (chile powder, salt, garlic powder, coriander, cumin, cayenne, onion powder, and dried parsley) to have about 1 Tbsp of spice mixture.
  3. Season the pork tenderloin liberally with the spice blend on all sides.
  4. After the oven is preheated add about 1 tsp of oil to the cast iron skillet and swirl it around.  Then add the pork tenderloin to the skillet and return to the oven for 10 minutes.
  5. Lower the oven temperature to 400° Fahrenheit and flip the pork tenderloin.  Return to the oven for 8-10 minutes.
  6. Slice the bread and prepare the topping
  7. When pork has reached and internal temperature using an instant read thermometer of 140-145° remove the pork tenderloin and cover with foil while still skillet for 5-10 minutes
  8. Slice the pork into about 1/8 inch slices and assemble the sandwiches.
